Tofu Burger 素漢堡

These three versions of veggi burgers are delicious, super nutritious, and very easy to make. The main ingredients are either black bean or the left over grounded soybean from the making of Soybean Milk. If you don’t have grounded soybean, just use the black beans from the can.

Once you make the patties, you can save them for days, and eat it as a snack by itself, or serve it with a bowl of green salad, or in a bun/toasts.

As I am putting this recipe online, I am tempted to make some for myself again!


1. Black Bean & Soybean Burger 黑豆豆渣漢堡

Ingredients: Amount Calories
  Black Bean 7 oz, ~half can 158
  Grounded Soybean Leftover (pre-cooked) 豆渣 7 oz 200
  Rolled Oats 1/2 cup 150
  Raisin Bran Cereal (without the raisin), can be substituted with other cereal flakes 1/2 cup 100
  Onions 2, small 60
  Mushrooms (or replace it with other vegi of choice) 5 pieces 60
  Flour 1 tbsp 28
  Egg Yolk 1 40
  Pepper to taste    
Condiments:  
  1TSP Salt; 1TSP Pepper; 1TSP Garlic Powder    

  2TSP Canjun Spice; 1/2TSP Chinese Chili Sauce蒜蓉醬;    
  Sum:   865
  # of servings:   8
  Calorie Per Serving:   108

 

Directions:

  1. Precook the grounded soybean (usually it’s leftover from making the Soybean Milk). Bring to a boil. Drain out the soybean milk and separate the grounded soybean.
  2. Finely chop the onion and mushrooms. Add any other chopped vegetables as desired.
  3. In a bowl, mix egg and condiments.
  4. Blend all ingredients along with egg and the condiment mix, either in the food processor, or blend it manually.
  5. In a pan, spray oil spray or use 1/2 TSP of oil (same calories). Scoop out the ingredients, make it into a round burger shape. Pad down tightly with a spatula.
  6. Cook in low heat (3), cook each side for 14 minutes. Don’t cover the pot while cooking.

  7. ~Serve by itself, as a healthy, low calorie snack!

    Ingredients: Amount Calories
      Grounded Soybean Leftover (pre-cooked) 豆渣 14 oz 400
      Rolled Oats 1 Cup 300
      Onions 2, small 60
      Mushrooms (or replace it with other vegi of choice) 4 pieces 100
      Egg 1 70
    Condiments:  
      salt, pepper, celery salt; rosemary; chill pepper, paprika, or any other desirable seasoning    
      Sum:   930
      # of servings:   6
      Calorie Per Serving:   155

     

    DIRECTIONS:

    1. Precook the grounded soybean (usually it’s leftover from making the Soybean Milk). Bring to a boil. Drain out the soybean milk and separate the grounded soybean.
    2. Finely chop the onion and mushrooms. Add any other chopped vegetables as desired.
    3. In a bowl, mix egg and condiments.
    4. Add little bit of water to the rolled oats. Heat in microwave for 20 seconds.
    5. Blend all ingredients along with egg and the condiment mix, either in the food processor, or blend it manually.
    6. In a pan, spray oil spray. Scoop out the ingredients, make it into a round burger shape. Pad down tightly with a spatula.
    7. Cook in low heat (3), cook each side for 10 minutes. Don’t cover the pot while cooking.

    8. ~Serve with hamburger bun or toasts. Perhaps along with a glass of freshly made Soybean Milk!
