The Incredible Shepherd’s Pie

This is one my my favorite dishes. It was SOOO good! Out of this world kind of good. You wanna chow down the entire pot kinna good.


Traditionally Shepherd’s Pie is made with ground lamb. But since I couldn’t find it in the nearby supermarkets, I used 96% lean ground beef instead. There are a few items that could be substituted. I opted for the less fatty ingredients, so I used reduced fat sour cream, 98% fat-free chicken broth, and light butter when making this dish. It came out unbelievably tasty! Even I was impressed with myself! I decided that I’d make this dish for my entire family next time around. Gotta spread the JOY baby.

This was our Christmas dinner. I also made Apple Pie (from scratch) as dessert! I still remember the twinkling light hugging the little Christmas tree in our living room. It was a delicious meal and a fantastic evening.

 

Ingredients Calories
  potatoes, peeled and cubed (3 potatoes or 1.5 lb)   180
  Reduced-fat sour cream, 2 tbsp (or softened reduced fat cream cheese)   60
  1 large egg yolk   60
  98% fat-free chicken broth, 1/2 cup (or reduced fat cream)   70
  Salt / pepper, 1 tsp , add more if desired   &nbsp
       
  96% lean ground beef (or ground lamb), 3/4 lb   1183
  frozen carrots & peas, 2 cups   300
  mushrooms, chopped, 1 cup   15
  1 medium onion, diced   44
       
  light butter, 2 tbsp   100
  flour, 2 tbsp   50
  beef broth, 1 cup   10
  Worcestershire Sauce, 2 tbsp   30
       
  paprika, 1 tsp    
  finely chopped parsley, 2 tbsp    
  Sum:   2102

DIRECTIONS:

    Mashed Potato:

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain potatoes and pour them into a bowl.
  2. Combine sour cream, egg yolk and chicken broth. Add potato with the mixture. Mash well, until potatoes are almost smooth.
  3. Add salt and pepper

    Ground Beef Mixture:

  5. Preheat a large skillet over medium high heat. Brown ground beef. Season salt and pepper if desired. Drain away fat and set aside.
  6. In a pan, sauteed the vegatables, carrot, peas, onions, and mushrooms in 1/2 tsp of light butter over medium heat.
  7. 3. Add in the ground meat. Continue to sauteed for 5 minutes, stirring frequently.

    Gravy:

  9. In a second small skillet over medium heat, cook butter and flour together 2 minutes. Whisk in beef broth and Worcestershire sauce. Thicken gravy 1 minute.
  10. Add gravy to meat and vegetables.

    Final Step:

  12. Preheat broiler to high.
  13. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned, about 5min.
  14. Top casserole dish with chopped parsley and serve.
